Is this different from your normal web hosting?

Will plugin updates break my site?

Updates are applied to a copy of your site first and checked. If something fails, the update is held back and you get an email explaining what and why. You can also switch to manual updates.

Can I use any theme or plugin?

Yes, with a short list of exceptions: caching and backup plugins are unnecessary because the server does that, and a handful of plugins known to be insecure are blocked for your protection.
